If you haven’t heard of the Picanha by now, here’s the lowdown: it’s also known as the Rump Cap, Sirloin Cap and sometimes, the Culotte Steak but perhaps most famously, it has been coined the Queen of Steaks. Why? You know the saying “Behind every successful man is a strong woman”? If the King of Steaks is said to be the Ribeye cap, then it needs an amazing cut that has a force of its own to be its Queen and match and that cut is the Picanha. You know… the Michelle Obama to the Barack Obama – both amazing in their own right. 🙌🏼🙌🏼
A prized cut in Brazil for their churassco, the Picanha is lusted after for its intense beefy flavour and is best served medium rare. You’re guaranteed more flavour than the rib-eye because of all that walking around and working on em glutes.
Now add a Wagyu gene to that and the intramuscular fat (fancy name for marbling) adds more tenderness and flavour to this already flavourful cut.
Make the Wagyu a Full Blood genetic and simply put, it brings the flavour dial up to 11. The Full Blood here refers to its pure Wagyu hereditary – not a hybrid, but the OG.
Honestly, once you go Full Blood, you can’t turn back to regular Picanha. Consider yourself warned!
