    We wanted to do justice to the classic tin of Corned Beef. But, if you haven’t had the real deal, you’ll learn that real Corned Beef is anything but mush.

    Traditionally Corned Beef is made with the unassuming brisket, packed with corns of coarse salt (hence its name) to preserve meat in place of refrigeration. Now, we cure the brisket in a liquid brine mixed with spices and curing salt for a few days, then it is cooked and stored.

    The end result is frankly, nothing sexy. The potential however, is limited only by your creativity. Featured here are 3 ways you can prepare it with plenty more for your to explore: sliced thick in a sandwich, cubed and with potatoes for a breakfast hash, in a New England Boiled Dinner style (sans cabbage cos we forgot to buy some but its reflective of emergency meals, no?) and stir fried with brussel sprouts. Tip: It’s already salted so you can reduce the salt when you cook your dish.
