    Part of our Great Dry-Age Experiment, this Aus Black Angus Ribeye was coated with cocoa smoked-tallow and dry-aged for 30 days.

    The wonderful result is the flavours from the smoked tallow and the cocoa merging with the funkiness from the dry-aging process: a straight road to Flavour Town.

    As we cut all our steaks by hand and not with a machine, the actual weight of the steak could vary +/- 10% of the weight indicated here.
